Sickness Silver Lining: Hunter Boots

Day 5 of absolute infection.


I swear when I walk my dogs people think its the zombie apocalypse when they see me.  
So what’s a girl to do when she’s all grody and sick?
Shop the internets… duh.
After hours of googling, I FINALLY found Hunter boots that were under their usual $125 price tag.
And they aren’t electric orange (or some equally offensive color).

They are ‘bitter chocolate’ and I am doing a hideous, zombie like, happy dance because they are $86.93.

Now I’m on the hunt (get it? hunt/hunter… har de har har) for fleece boot socks that aren’t $40.

I did find a pattern for knit boot cuffs. I’m thinking if I could figure out how to attach the knit boot cuff to an existing wool or fleece sock then I could make something that looks like this:

Without the ‘Hunter’ tag of course. 
Anyone have any suggestions on how to make something like this?  How would I sew the cuff to the sock without closing up the foot hole?  
I’m a total newb at sewing and knitting.
